Learn The Key To Great Gnocchi

When was the last time you went out to eat and paid close to $20 for a plate of gnocchi for one? If you said recently, then you’re about to be blown away. For about half that price you can make enough gnocchi at home to feed four people for dinner. We’ll give you the basic recipe for potato gnocchi, followed by suggested ways to serve it, but just know you can serve this gnocchi with any sauce of your choosing. Let’s get into it!

How To Make The Gnocchi

The first thing to do is hit the grocery store. You’ll want to pick up a pound of potatoes, a bag of flour, eggs, and salt (we’re willing to bet you have the last two on hand already). Start the process by boiling the potatoes in a large pot until they’re tender enough for a fork to prick them with little effort. This could be anywhere from 20-45 minutes, so just watch them. Next, remove the skins (should slide right off with a fork) and either run the potatoes through a ricer or mash them with a fork. Begin to form a soft dough by slowly adding flour a half a cup at a time. This recipe calls for one cup, but it could take 2, depending. Add in egg and salt, and mix until you have your dough. This should not be sticky, so add flour until you get a firm ball of dough. Now, dust a cutting board with flour and cut your dough ball into two. Cut each half into another half, and roll the dough out to form a rope. Then, every inch or so cut to form little pieces of gnocchi. Do this with all of the fourths. Place the gnocchi on a floured baking sheet, dust with more flour, and then let them freeze for about 2 hours. Now for the easy part; boil salted water, drop the gnocchi in one at a time, and pull them out once they float to the top.

From here, you can serve as-is with pasta sauce or pesto, or you can pan fry in butter to get a nice crunch. Endless possibilities!
